Chocolate Fudge White Chocolate Macadamia Nut Cookies

Occasionally (albeit rarely) I have a day where I just need to run something out. Maybe for you it’s blasting music or crafting pj pants or paintballing (even though you may not have medical insurance)…hopefully it doesn’t come to punching a wall, but you get the idea. Well here’s a handy suggestion next time this day hits you in the face…BAKE IT OUT, BABY. Turn on some tunes, and just bake. Zone out, eat several spoonfuls of cookie dough, then look at this FANTASTIC website (click here, now!) while you’re waiting for your yummy goodness to emerge from the oven, and then enjoy the chocolately, fudgey, creamy, nutty cookies you just made!

These little gems you see here are Chocolate Fudge White Chocolate Macadamia Nut Cookies!!! I adapted the recipe from Joy the Baker’s cookbook, and they were pretty frickin goooood, you might even say soul-curing :)

Caitlyn’s Paninis

When you forget to take a picture of the beautiful frosted brownies that you made for your coworker’s going away party, if you’re lucky like me, you have an AWESOME roommate who also creates deliciousness in the kitchen to provide material for a fun blog post.

Caitlyn created a fabulous panini which she has dubbed, “The Monster Mash,” ever so lovingly named after our little monster man- aka demon, aka Cujo the crazy dog and other names which may offend some eyes here. The panini all started with the homemade roasted eggplant and red pepper spread – the real star of the show – it was yummus (just like hummus). Spread that on thick onto your bread, stack it with a grilled portobello mushroom, tomato, and spinach. Then grill it up, and you’ve got yourself a wonderful dinner!

Roasted Eggplant, Pepper, & Chickpea Soup

“Sometimes I’ll think about something you said, and I’ll laugh, and then the other people choosing tomatoes at the grocery store will wonder what’s so funny about that tomato.” :)

So after some impromptu (read: random, out of my crazy brain) soup-making, tonight I finally decided to pull out my “Love Soup” cookbook that, of course, came to DC with me. And guess what?! I found a card with that adorably accurate note on it from my mom stuffed inside. :) It only took me 5 weeks to find, but there it was! It’s so true too, and I secretly love when I laugh out loud to myself, and people around me think I’m crazy- mostly because it’s just so darned hilarious, and I’m thinking of you.

So then I made this yummy Roasted eggplant, pepper, and chickpea soup! I was starving, but decided to have an appetizer so that I could allow the proper time for the roasting- so key. And it had tomatoes, onion, garlic, and oregano in it too- classic! But the awesome part is the fun bzzzz with my immersion blender- totally professional :)

Zucchini Cream Cheese Pound Cake

I thought I was only going to have time for one new recipe this week what with the craziness of moving and all, but as it turns out, I had access to a big, beautiful, well-stocked kitchen for the WHOLE weekend! :D Every girl’s dream, right? …Well mine at least!

So I made a celebratory Zucchini Cream Cheese Pound Cake with a brown sugar cream cheese frosting. It was a delight! :) Rich, yet deceptively light because of the zucchini and tang from the cream cheese. If it didn’t have the frosting it would have been a perfect dessert-breakfast crossover cake…but I didn’t let that stop me! :D Hey, don’t give me judgy eyes, I had it along side a healthy smoothie, and it was goooooood!

Cardinal rule, don’t frost a warm cake unless it’s already 10:30 and people neeeeeed dessert.

The Onion Makes the World a Better Place

This is why I LOVE The Onion. Doesn’t that make your Valentine’s Day better?! But really, what’s not to love about the day, come on, it’s a day with lots of candy for all, yummy food, and in my case some quality action movies. So embrace the love – especially the love of a friend, perhaps a dog, and definitely some CHOCOLATE! :D

And in the wise words of Charles M Schultz, “All you need is love, but a little chocolate now and then doesn’t hurt.” (…now, go have it NOW!)

The Year of Making Things Happen

2012. The year of making things happen. I can, and I will. Job search in DC?…bought my ticket, and just went! BAM, just like that! Making that awkward phone call? Went for it. Crazy hard spin class? (sore for a couple of days) but, DID IT!

It’s also a year to be filled with many more delicious recipes. And to catch you up on the magic that happens when I don an apron, there have been sweets abound, but also more soup than I remembered to take photos of. The cupcakes were the lovechild of a “chilly” (read, 62 degree) California day and my joblessness. For the Super Bowl, Caitlyn and I decided, “why not?! it’s Christmas! let’s go for it!” and made “slutty brownies” (…because they’re oh so easy and just a little bit dirty) – definitely one of those things that makes life better.

I also HIGHLY recommend Joy the Baker’s vegan cream of mushroom soup!!! <3
