I’m feelin good. 2014 so far has thrown me some curve balls, but it has been a great restart. I believe you should restart anytime throughout the year in a “New Year’s Resolution” kind of way whenever you need it. I did a surprisingly good job on my resolutions last year but didn’t seriously sit down to make new ones for 2014 – they just sort of happened to me.
I’m starting my new year – Le Petit Artichaut just turned two and I’m about to embark on another year myself. I’m fully focusing on me and the amazing people I have in my life. I’m at a new restaurant as a pastry cook! That means I work more, but I’m so so happy with it. I’m totally taking a break from dating. I’m making big plans for the summer. I’m feeling really healthy (seriously shocked working in pastry for two months hasn’t done a number on my waist), and it’s indulgent, yet healthy recipes like this Chocolate Banana Froyo that are a God-send. I’m sure y’all have seen this recipe floating around on the interwebs, but I just needed to make sure. It’s SO silly easy and so healthy. You only need two or three ingredients depending on how you want to roll – ripe, frozen bananas, cocoa powder, and peanut butter (optional). Blend the frozen bananas together with the other chocolate and peanut butter – it’s gonna look really weird for a bit, but I promise, if you hang in there, it will all come together in a beautiful creamy froyo-y consistency. And BANG BISCUIT, healthy froyo. You’re welcome!
Here’s what I did:
Chocolate Banana Froyo
Slice into ¼” pieces, lay on a plate in a single layer, line each layer with plastic wrap, and freeze overnight (or a minimum of 5 hours):
-4 very ripe bananas
Blend in a food processor until smooth and creamy, scraping down the sides as necessary:
-the frozen banana pieces
-4 Tbs. cocoa powder
-2 Tbs. peanut butter (or sunflower or almond butter)
Scoop and serve!
-add 1 Tbs. instant espresso powder for a chocolate coffee situation
-add frozen berries instead of cocoa powder
-add the zest of an orange for chocolate orange froyo
