HAPPY SNOW DAY EVERYONE!!!
…oh, what’s that? You live in one of those states where you’ve been gloating about your fantastic, warm, sunny weather? Consider this my official revenge. I get to stay at home with a big brunch (read: slept in past breakfast) of pancakes and eggs, a roaring fire* and hot cocoa (sure to be spiked once we near the 5:00 hour…or 4:00, let’s be honest) baking up a storm and spending a lot of time basking in the glory that is a surprise day off, met with childlike joy.
Warning: I’m feeling very ADD today.
Did you know Valentine’s Day is tomorrow? My favorite reminders thus far have been the ads for House of Cards coming out tomorrow (genius, by the way), the Bad Romance spin class I did – heavy on the Alanis, and this gem from the Huffington Post.
Also, I’m ready for another adventure. I want to WWOOF or road trip or something asap. I think the winter months have made me antsy. Anyone have any ideas for me? I need a quick fix. And now for something else completely different:
I made this Black Bean Quinoa Enchilada Bake with Elizabeth last week, and it feels wonderfully appropriate for such a wintry day. This recipe is an easy vegetarian meal that doesn’t feel vegetarian – there’s ample protein from the beans and quinoa and the peppers, corn, and onions give it a heartiness. The enchilada sauce and cheese bring it all together into a perfect bowlful of Mexican goodness. You should change it up however you are inspired – use mild enchilada sauce, or go whole-hog with the spicy; add in some browned ground turkey or beef if that’s your thing. It looks like a lot of ingredients, but don’t worry, it comes together really quickly.
