Let’s impress your friends and family this Christmas season! I think it’s really nice this time of year to bring homemade treats to a friend and have them sittin’ pretty in a bowl in your office or at home. I magically just happen to have a fantastic recipe for just such an occasion ;)
This time of year is tricky to please everyone you know – especially now that it seems every other person you know is gluten-free or vegan, and of course there’s the “watching-my-holiday-waistline” ones who shy away from my decadent desserts…come on! Why not?! It’s CHRISTMAS! (Don’ worry, those recipes are still to come, like these perfect Christmas cookies :) But…
This recipe for Cherry Cocoa Truffles is easy, fun, and best of all is something that you can feed to everyone you know. The dates make them sweet without adding sugar, but I like the combo of the tartness from the dried cherries, and obviously the cocoa powder gives you that insane chocolate kick (and the espresso powder highlights that flavor). Dress them up with your choice of coating. Go crazy! Dazzle your friends!
Here’s what I did:
Cherry Cocoa Truffles
In a food processor, combine:
-¼ c. unsweetened cacao powder
-1½ c. dried tart cherries, pitted
-1½ c. Medjool dates, pitted
-1/3 c. unsweetened shredded coconut (or quick-cooking oats if you prefer)
-½ tsp. sea salt
-2 tsp. instant espresso powder
-2 Tbs. water
Add more water if the mixture is too dry, and add more coconut if the mixture is too wet.
Scoop the puréed mixture out by the spoonful and roll into 1-inch balls. Roll the truffles in any of the following (I did the first two):
-½ c. unsweetened shredded coconut, toasted
-½ c. crushed lightly toasted hazelnuts
-½ c. crushed lightly toasted pistachios
-½ c. cocoa powder + 1 tsp. sea salt
Set the truffles out for immediate consumption or cover and refrigerate for up to a week. Enjoy!
