Remember how I said I was super excited for squash season? That’s not a joke. In the past two weeks I have made/consumed:
-Acorn squash and leek soup
-Spaghetti squash with feta, white beans, and spinach
-Butternut squash chili
-Spaghetti squash and spinach fritters with Sriracha mayonnaise
That’s some serious squashing. I love it all. And I’m still looking forward to more butternut and spaghetti squash in my future, but this has been a quality start. Let’s pave the way to winter – not with broken promises but with squash.
Now, I know y’all were worried about a possible Sriracha shortage, but don’t worry, they’re gonna keep at the good work. This Sriracha mayonnaise sauce surprised me – the vinegar gives it a serious tang. I obviously couldn’t follow the recipe straight, so I also added some garlic and ketchup to round out the flavors.
You know what did not surprise me though?…The fritters. I mean, are fritters ever bad? I suppose if you left to go make a cocktail and ended up burning them to a crisp, but then you have a cocktail, so still not bad. And these ones came with the added benefit of being able to show off my mad strength from all those pushups…there’s a solid ten minutes of squeezing out all the liquid from the shredded spaghetti squash, and let me tell you – those bad boys have A LOT of liquid. But we can’t have soggy fritters, now can we?
These fritters are simple and delicious. You get a salty bite from the Parmesan and that…squash flavor? I honestly don’t know how to describe spaghetti squash, but can we talk about how cool it is?! Once you cook it, it shreds into SPAGHETTI, I know we understand that from the name, but I’m still amazed by it.
It’s also great as a replacement for pasta in your favorite baked pasta recipe – I like to do a homemade marinara sauce with mushrooms and onions and mix it all together and top it with smoked mozzarella, bake it, bam. It’s such a cool squash. Just sayin. Try these fritters, you’ll love ‘em.

Your recipes make my mouth water… and make me miss the variety of squash available in North America (I live about half an hour below the equator). I feel like I get a little taste just from the pictures!
