Oh hey, didn’t see ya there! How are you today? Is that a new shirt? Well it looks stunning.
So I’m teaching myself some important life lessons lately. Some smaller, some bigger. Let’s talk.
#1: I’m embracing the last minute plans. This one I already knew, but I’ve been doing it a lot more lately, and honestly, the spontaneous plans often turn out to be some of the best.
#2: I ate a fresh Krispy Kreme doughnut and loved every second of it. Then had another one. No regrets. (It had been 40 days sans sweets, so I felt great about it.)
#3: Even when my day is crazy-busy, I’ve been taking 10 minutes to walk around the block and get some fresh air. It does WONDERS. And if a latte is involved, even better.
#4: I’m advocating for myself. Ok, this is obviously the big one. By most people’s standards I’m a nice person. This is good news. I love being nice and positive! (Even if people think I’m over the top…it’s my joie de vivre. Taste the happy.) The problem with part of my brand of nice is that I never want to step on toes, and that means that even when people take me for granted and make excuses or apologize, I usually let it go. So in those cases when I need to step it up or shouldn’t just brush it off, I’m trying to stand up for myself. It’s a little nerve-racking, but it’s rewarding and it feels great! Yay me! :D
#5: And finally, what have we always said is the most important thing?…
For those of you who reeeeaaaaally know me, you know that I’m a pancake snob. Odd thing to be a snob about? Probably. Deal. But hands down, the best pancakes in the world are at Norm’s diner in California – the original 1949 buttermilk recipe. (Yep, I knew that year off-hand. I’m THAT obsessed with these pancakes.) There’s something so comforting about buttermilk pancakes. The buttermilk makes them luxurious and gives that tang that you just can’t get otherwise. I really hate overly fluffy, cakey pancakes that are too sweet – this is often the case at most restaurants, so I typically avoid them. Also, I don’t know if I’ve mentioned this before, but if you even TRY to put syrup on my pancakes, I will shank you. That’s a little strong, but really, don’t. That’s a sure way for you to literally watch the joie de vivre drain from my face. That and telling me I have something in my teeth when I’m laughing. I hate that. Or telling me there’s no more coffee…my worst nightmare.
These pancakes I made aren’t quite Norms’ but they’re pretty darned fantastic.
Put on your slippers, pour yourself a cup of coffee and make these buttermilk pancakes!
*Makes about 17 4-inch pancakes
Whisk together in a large bowl:
-2 c. all-purpose flour
-2 tsp. baking powder
-1 tsp. baking soda
-2 large eggs, lightly beaten
-3 c. buttermilk
Whisk to combine. You should have some medium/small lumps still (over-mixing will make your pancakes, and we all like light pancakes here.)
Preheat a large skillet over medium heat. Once heated, coat the surface with a little butter, and using a 1/3 measuring cup, pour your batter onto the skillet. Like this: http://cinemagr.am/show/139157490
Let them cook for about 2-3 minutes, until lots of little bubbles appear on the top, and then flip them over (quickly so the batter doesn’t get everywhere…with CONVICTION!) Let the other side cook for about a minute – make sure that side is browned, and stack ’em up on yo plate! Enjoy with salted butter…or syrup if you’re crazy.
