Every morning I wake up faced with a serious dilema. A big problem that is probably the largest source of stress in my life. Do I just toss back some coffee and get out the door for a run, or do I want to make a fabulous breakfast and have a nice relaxed morning?! …ok, so maybe I’m not a very stressful person. But breakfast is probably my favorite meal to make- usually yummy veggie omlettes/scrambled eggs or whole wheat pancakes or mmm- grits or a fruit smoothie and ALWAYS coffee! :) Aaaaand I love running first thing in the morning, but not on a full stomach, seriously not fun. Today’s dilema was solved by my poor neglected waffle iron.
It’s been a while since I’ve made waffles cause I love me a savory breakfast (NEVER put syrup on my pancakes or you will pay dearly… loooooooove you!), but this morning I was inspired!!! I made some scrumptious nutty waffles and ate them with the fam out in the garden in the beautiful California sun :)
So I basked in the sun, and ate delicious sweet and nutty waffles and scrambled eggs with freshly squeezed orange juice (from our trees!) and coffee. Then I just waited a bit, and went for a run in the afternoon. I guess if this is consistantly my biggest problem in life, I’m doin ok.
Whole Wheat Pecan Waffles
-You could easily double this recipe, but this made 10.
1 1/2 cups each of all-purpose flour and whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons packed brown sugar
**Whisk all above ingredients together in a medium bowl.
**In a separate bowl whisk together the following:
1/3 cup canola oil
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
**Then add the wet ingredients to the dry. Try not to overmix, or the batter might get tough. Then stir in:
1/2 cup dry-toasted chopped pecans
**Heat up the waffle iron, pour about 1/3 cup of batter for each waffle (depending on your iron), wait till they’re golden brown, and then go to town – the only thing I will recommend maple syrup for!
